Print Robin’s Cowboy Caviar

1 can black beans rinsed and drained
1/2 cup corn kernels
1/2 red bell pepper seeded and chopped
4 scallions, sliced
1/4 cup chopped fresh cilantro
1 avocado
2 tablespoons fresh lime juice
2 teaspoons olive oil
1 teaspoon ground cumin
1 garlic clove, chopped
1/2 teaspoon salt
1 head Boston lettuce, cleaned and separated into leaves
Tostito Scoop Chips
Combine all ingredients except lettuce and chips. Refrigerate, covered, for at lease 1 hour to allow the flavors to blend.  Serve with lettuce cups and chips.
